Abstract

The practicum was conducted at Hacienda Macalauan, Incorporated, a dairy processing company, located at Barangay Mabacan, Calauan, Laguna, from April 10 to May 9, 2014, covering a total of 168 hours. The trainee, under the Quality Assurance and Research and Development department, was able to participate in the activities performed at the Chemical Laboratory, Microbiological Laboratory and the Research and Development department. These activities include testing of raw milk upon delivery through sensory evaluation and chemical analysis, testing of water to be used for the plant's operations, mi robial and hemi al analysis of in-line produ ts and end produ ts, developing new variation for the company's existing dairy product, and even assisting in monitoring the hygiene of workers through swabbing. The trainee learned that the success of the company is brought about by its activities towards quality and safety assurance.
