Abstract

Food is something we must to satisfy out appetite and to meet physiological needs for growth, to maintain all body processes, and to supply energy to maintain body temperature and activity. Food does not only include rice, fruits, anfd vegetables but also encompasses beverages, medicines, supplements, ingredients and flavorings. Nowadays, the problem in food security is ever increasing. To address this crisis, agricultural production must also be increased without giving any threats to public health and causing harm to the environment. Secondly, there should be a guarantee that the food will be probably distributed and allocated, thus accessible to all. And lastly, practice of food processing must be properly employed provided that food that is subjected to processing and preservation is consumed by man in larger fraction than when it is newly- harvested. The field practice was done at FARMTECH FOODS, INC. fro April 29 to March 30, 2008. The processing plant is located at J. P. Rizal Street, Brgy. Sabutan, Silang Cavite. The field practice aimed to apply agricultural engineering theories and principles in powdered foods processing. It focused on the processing operations of Ampalaya powder and performance evaluation of FARMTECH dryers.Furthermore, the field practice includes the assessment of the plant in terms of proper implementation of GMP and appropriate handling of wastes.FARMTECH FOODS, INC. is a processing plant for dehydrated powdered food products by which are classified whether (a) spices and condiments (b)teas and herbs, (c) root crops and tubers, (d) fruits and berries, and (e) seafood and derivatives. The company produces chicken fat oil through rendering operation and also a provider of tolling services for drying and pulverizing requirements for local food processors. Recently, FARMTECH has also entered the toll-packing and toll-manufacturing business. FARMTECH FOODS INC which is originally known as FGE FARMTECH was established by Mr. Fabian G. Espiritu (GGE) and his wife. The couple realized that there is an increasing demand for indigenous and locally manufactured food ingredient and thus decided to venture in producing it. The change of name from FGE FARMTECH to FARMTECH FOODS, INC. signaled the progress of the company. They expanded their production by increasing the capacity of their facilities and deal in processing with even more products. The company implements GMP and HACCP to ensure the quality and safety of their products. However, there are still problems that arise and observed by the trainee during the field practice.The recommendation for some of these problems include (a) the improvement of the company's existing wastewater management system and drying preparations, (b) using transparent lights in the production area, which are sheltered by screens instead of continuously using diffused lights, (c) using more accurate way of metering water consumption in the tank of the boiler and kerosene consumption of SATAKE engine which runs the dryers in the shrimp room, and among other recommendations. The field practice not only made the students knowledgeable on the processing operations of dehydrated powdered food products but also realized the importance of adopting GMP and HACCP for the general interest of the consumer and not just for the sole purpose of profit generation. The field practice also made the trainee learn how to wasily mingle with ordinary workers and people working with higher positions.
