Abstract

The major plant practice was conducted at Bakels Philippines, Inc. located at Suites 601 & 602, Raffles Corporate Center, Emerald Ave. , Ortigas Center, 1605 Pasig City under the Research and Development and technical Services Department for a from April to May 2013 Bakels Philippines Inc., is a bakery ingredient company and remains to be a top mover in the local baking industry with the range of their bakery ingredients is formulated to suit the needs of different bakery all over the country. Activities offered by the department including product development, product application, and quality assurance were performed by the student. Several experiment and sensory test involving the said activities using the company's product were conducted throughout the practicum. A special project involving recipe development using a particular product of the company was done and was presented at the end of the practicum. Problems that were encountered during the training were used to draw recommendations to further improve the program. The Practicum enhanced the student's hand on experience and interpersonal skills, and provided the student a deeper understanding of the operations involved in the baking industry.
