Abstract

The plant practice was conducted at the cheese and groceries team of the research, development and quality department of Mondelez Philippines Inc., from April 10 to July 30 2014 for a total of 591.6 hours. The said plant is one of the many plants of Mondelez International in asia which is responsible for the research and productiojn of cheese blocks and spreads and also the home of the powdered beverage research team. During the practicum, the trainee was tasked to different activities which includes: the preparation, cooking and evaluation of different cheese products exercises related on the basic ingredient of cheese, hands-on training of the different equipment used in the pilot plant production, quality improvement of the of the different brands and alternative material analysis. At the end of the practicum, the trainee was able to associate the practices done in the plant and the principles taught in the University. In addition, good work ethics different techniques and skills in working at a food processing facility and meaningful interactions with different co-workers were acquired by the trainee.
