Abstract

The practicum was conducted at the Franklin Baker Company of the Philippines located at Maharlika Highway, San Pablo City, Laguna. It started last April 28, 2014 and ended on May 27, 2014 at the assigned department, Quality Assurance. Franklin Baker of the Philippines is a pioneer and one of the leading distributors of desiccated coconut globally. All manufactured desiccated coconuts are available in different varieties depending on the preference of the customer. Other products include coconut water and coconut water concentrate. The student conducted tests and analyses which are implemented inside a food company. This allowed the student to apply her knowledge on the methods and principles gained from the University and familiarized herself with the equipments rarely found inside the laboratory. The student also conducted different microbial analyses for finished and non-finished products. Environmental swabbing is employed to areas inside the plant to validate sanitation. Water Analysis assures that water used for manufacturing is safe from any hazards and contaminants. At the end of the practicum, the student was expected to be able to gain skills regarding the plant operations and submit a detailed written report containing analysis of the company and descriptions of activities done.
