Abstract

The field practice was conducted at Pililla Poultry Processing Plant, Inc. (PPPPI) located at Sitio Yacat, Barangay Quisao, Pililla, Rizal from April 23 to June 26, 2014. The processing plant dresses chickens and further cuts them depending on the client?s specifications. The field practice focused on the chicken dressing operations and management for the production of meat. This helped the trainee understand the different processes involve in dressing operations from receiving of live birds until the delivery and distribution of dressed chicken to the customers. The trainee was also exposed to different materials, machines and equipment used in each area as well as understanding their principle of operations. During each operation, the trainee observed some problems and recommendations were provided. In addition, the field practice showed the trainee the importance of proper handling of meat produced, proper waste management and plant sanitation. Also, the trainee experienced doing some of the dressing operations with the guidance of production supervisor, workers, and lead men.
