Abstract

The field practice was conducted at Purefoods-Hormel Company at Bo- SanRoque, Marikina City on May 22, to June 17, 2006. The field practice focused on three different activities such as (1) processing of canned pork, (2) line Quality Assurance on construction of a normal double seam and (3) time and motion study at Retort Operation. The processes observed in the pork and Beans line started from preparation of the different raw materials used in the canning process up to final operation of seaming. The processes included meat preparation, beans preparation, sauce preparation, filling and seaming.. The actual operation of the canned pork and beans was observed on the plant and interviews were also conducted which further helped the student to understand fully the processes involved.The quality standards of line QA had been observed during the seaming operation in the line of beans processing operations. Standards set by Quality Assurance were followed to ensure the safety of the foods canned on the line. The quality of the canning standard used was based on the illustration board distributed by Machinery Corporation of America showing the Construction and Nomenclature of a Normal Double Seam. The student also conducted a time and motion study that focused on the activities at the Retort Operation Section. The study was ordered and supervised by the IE department with the help of the assistant supervisor. The student trainee conducted the time and motion study on loading and unloading of baskets from the retort vessels.Good supervising and managing skills among the supervisor and operators regarding the implementation of the rules and regulations inside the plant. Experience of the operators was very important in handling the equipment and knowledge with the preparation is very critical in the beans processing line operations and retort section.
