Abstract

The plant practice was conducted at Quality Assurance and Manufacturing Department of Zenith Foods Corporation which is a full subsidiary of Jollibee, and is the newest commissary located on a 6-hectare property in the Carmelray Industrial Park. The training was done from April 15, 2013 to May 7, 2013. Orientations about the Company, Safety, Good Manufacturing Practices were given to the student to prepare and give her an overview of the whole program. Sampling, physico-chemical analyses, microbiological analyses, and sensory evaluation were performed on the raw materials and finished products. The student was also allowed to audit and observe the actual production processes in the plant. The student was able to apply the principles of food technology learned from the university to actual plant operations. The training program enhanced the trainee's skills and confidence in performing laboratory works and techniques and in communicating with other people. It provided the student a wider understanding on the roles and responsibilities of a Food Technologist.
