Abstract

The practicum was conducted at the Food Development Center (FDC)-National Food Authority (NFA) located at FTi Complex, South Superhighway, Tahuig City, Metro Manila. The different principles and theories in food science acquired in the university as well as new principles and techniques learned were carried out to practical applications in the Filth Section of the Quality Evaluation Division. The trainee performed receiving and recording of samples coupled with analysis, evaluation and interpretation of results. Various standards and law requirements to ensure the safety and quality in the creation and/or analysis of various food products were applied. This experience helped enhance the trainee's self confidence and improved her independence in conducting laboratory works. Overall, the objectives as well as the expected outputs of the practicum were accomplished. The student was able to acquire new appreciation of the functions and works of a Food Technologist as well as expand her knowledge regarding the field.
