Abstract

The practicum was conducted at Universal Robina Corporation (URC), Calamba City, Laguna from April 20, 2013 to May 11, 2013. The processing of food and beverage products was done from Mondays to Sundays. The company is a large scale processing plant and produces various products like snack foods, confectionery products, bakery products, beverages, etc. The trainee was assigned into five laboratories of the Quality Assurance Department: Acceptance of Raw and Packaging Materials Laboratory, Microbiological Laboratory, Refresh Flavored Drink Laboratory, and PET 1 & 2 Laboratories where she conducted different tests such as organoleptic test, physico-chemical test and microbiological test of raw materials and finished products. The plant practice was done to apply theoretical knowledge acquired in the university and into actual food processing. Experience in food processing, specifically in quality assurance, allowed the trainee to gain techniques and skills required in being a food technology. Recommendations were presented to solve the problems observed and to improve food and beverage processing plant?s operation.
