Abstract

The practicum was conducted in Zenith Foods Corporation, A commissary for Jollibee Corporation where located at carmelray Industrial Park 1, Canlubang Calamba City, Laguna from May 9 to June 23, 2010. The commissary provided food products such as burger patties, buns, sauces, chicken joy and barbecue chicken and many others. For 157 hours the trainee was assigned in the Quality Assurance Department (QAD) such as Raw Materials, Traded Items and Packaging Inspection, Finished Product Testing and Evaluation, Microbiology Laboratory and Manufacturing. In this section of QAD, the trainee performed test such as physic chemical analyses, cook test and sensory analyses, of the meat products in order to comply with the standards the company provide. The trainee was able to do sample retention of the finished products as well as performed sampling of food prior to each test and swabbing of the equipment used and record keeping of the analyses of each raw material and finished product. The trainee also performed the monitoring, checking and analyzing of supplied materials prior to receiving. She was able to utilize the knowledge she gained in the university such as plating techniques and reading of plates after each test. Interpretations of the results of the previous experiments were done, as well as encoding of results in data system. In addition, she experienced the actual conduct of a microbial test on water and iced used for production. The plant practice was intended for the student to acquire technical skills and gain knowledge about the new techniques in food processing as well as the recent laboratory test analyzing the food products. The practicum also enables the student to apply the lessons the student have acquired in the university. The trainee was also expected to be exposed to actual food processing operations and determine the management operations particularly in processing, operations and production management.
