Abstract

The Hacienda ACIENDA Macalauan ACALAUAN IIncorporatedNC. (HMI) is one of the dairy manufacturers that were able to develop partnerships with giant restaurant chains and famous coffee shops in Metro Manila. Their products include liquid milk, yogurt, cheese and cream. The company’s primary concern is to help develop appreciation of the consumers for healthy quality living and promote good health to the community by providing good source of high quality fresh milk and dairy products. The Formatted: Space After: 0 pt xvi Formatted: Font: (Default) Times New Roman practicum was conducted at the Physico-chemical laboratory and Cheese room of HMI at Brgy. Mabacan, Calauan, Laguna. The practicum covers 150 training hours from April 2011 to May 2011. Activities and analyses performed include observation of organoleptic properties of milk such as odor, taste and appearance; physicochemical analysis of raw and processed milk and milk products; checking of chlorine concentration of water; and hands-on experience of packaging of milk products. These activities allowed the student to apply principles and theoretical knowledge acquired from the university into practical work situation and to expand her understanding of the nature of the chosen field. The student also acquired new techniques and gained more knowledge about dairy processing, and was able to have an experience to work with other people in the food industry.
