Abstract

The author had a supervised training at the company’s Corporate Quality Assurance Laboratory. This is primarily to apply in the actual food industry the theoretical knowledge she has learned in the academe. The author had managed to perform analytical tests, sampling methods, product evaluation, and documentation. Some specific methods of the mentioned activities are as follows: titratable acidity, total alkalinity, assay of purity of raw materials, determination of brix, salinity, viscosity, pH, moisture, peroxide value and free fatty acid of oils, crude fat, histamine concentration of seafoods, trade products, carton and label evaluation, and so on. The author was given a tour on the formerly operating canning plant, warehouse and cold storage. Difficulties were also encountered by the trainee, due to limited resources, repetitive calibration, and deviation of obtained results from the specifications. Nevertheless, the trainee adjusted to such problems by simply retesting and carrying out analytical procedures meticulously. The author had acquired a total of 150 working hours in the laboratory. The official working hours for a regular day is nine (9) hours; consequently, the student trainee had an estimated 17 days to attend work. The author had her practicum from March 28 to April 20, 2011 in the Corporate Quality Assurance Laboratory, Century Canning Corporation at 32 Arthuro Drive, Bagumbayan, Taguig City, Metro Manila.
