Abstract
The food science and technology practicum was conducted at Magnolia Poultry Processing Plant in Sirawan, Toril, Davao City. The plant produces dressed whole chickens and giblets; it also has its own microbiological testing laboratory. The duration of the training was 150 hours conducted on May 3 to 24, 2010. The trainee was able to exercise the document and record keeping employed by the company, observe microbiological analyses and conduct quality and sanitary monitoring inspections. Also, participate in optimization studies and a seminar held by an approved chemical supplier of the company. By the end of the training, the trainee would have gained more knowledge about the company, the actual processes involved in food manufacturing, management and maintaining the quality and safety of food products and write a comprehensive report regarding the training.
