Abstract

The practicum was conducted at Zagu Foods Corporation (ZFC) at 52 West Capitol Drive, Bo. Kapitolyo, Pasig City from April 6, 2011 to May 3, 2011 for a total of 150 hrs. ZFC manufactures the powder mix used in Zagu pearl shakes. The company focuses in creating pearl shake beverages that provides not only the basic nutrients needed by the body but also satisfy the cravings of their consumers. The student was assigned in the Quality Assurance and Control Department (QACD) and Production Department (PD) to perform physicochemical analyses, sensory evaluation, microbiological tests, and in-line monitoring processes to ensure that the safety and quality of the products comply with the standards set by the company. The practicum enriched the knowledge learned by the student in the University and allowed her to apply it in actual food processing set-up. The experience helped the student to have proper work attitudes needed in order to be successful in one’s chosen field.
