Abstract

The major plant practice was conducted at the Dairy Products and Technology Development Division (DPTDD), Animal and Dairy Science Cluster, College of Agriculture, University of the Philippines Los Baños (UPLB) from November 2011 to April 2012 for a period of 150 hours. The DPTDD Processing Plant manufactures milk products such as fresh milk, chocolate milk, yogurt and white cheese. The student conducted analyses of milk samples and participated in daily milk processing operations from milk reception to distribution of milk products. During the whole duration of the practicum the student was able to apply the learned skills and knowledge from the university into food plant operations, observe and understand the importance of everyday food plant practices and hands-on activities and most of all acquired skills in supervising a food plant and operations and develop a good attitude towards work and colleagues. The analysis of practices from milk reception to distribution, problems encountered during the whole duration of the practicum and recommendations were all noted and reiterated for improvement of the plant and for the maintenance of good quality milk products.
