Abstract

The plant practice was conducted at the Corporate Quality Assurance Department of Century Canning Corporation (CCC), Taguig City, Metro Manila. CCC, which provides superior quality tuna meals, is the marine and tuna enterprise of Century Pacific Group. The on-the-job training was conducted from April 11 to May 6, 2011 for about 158 hours. The training aimed to expose the student into the real food industry, to apply and appreciate the knowledge and skills acquired in the University. The student conducted chemical analyses of raw food materials needed for the production line and of finished products, inspected packaging materials and labels. Afterwards, the trainee was expected to have gained competence in the food industry and to be able to write a comprehensive written report about the training. In addition, suggested solutions to the problems encountered in the plant practice were also encouraged to be raised.
