Abstract

Abstract: The major plant practice was conducted at Katipunan ng Kooperatibang Maggagatas Integrated Cooperative (KKMI) dairy plant, Barangay Lamot II, Calauan, Laguna from April 23 to May 27, 2013. The cooperative has been well established in the dairy business and has a membership of loyal cooperatives such as Palcon Dairy Cooperative, Salba Dairy Cooperative, 33 Agro Ecology Multi- purpose Cooperative. Additional raw milk came from different farms, such as Benjie, Sofio, Eldie, Magdalena, Dorado,Yggachai, and Samabaco. The plant processes a maximum of 2,000 liters of milk a day. After receiving the raw milk, it is subjected to quality assessment which determines the kind of dairy products it will be processed. It can be liquid milk products like whole milk, low-fat milk, non-fat milk, half in half, chocomilk, carabao's milk and yoghurt or it can be a soft white cheese. KKMI market its product to regular and institutional customers in Metro Manila and nearby provinces which put orders on a daily basis. Some of the instituted buyers include Milk Joy Corporation, Mandarin hotel, Seattle's coffee shop, Tully's coffee shop and Rustan's supermarket. Before marketing, the processed products are subjected to quality control measures by conducting different tests such as organoleptic test, physico-chemical test and microbiological test. KKMI used the brand names Country Fresh and Gatas Pinoy for their milk products. Country Fresh is used for their bottled milk products while Gatas Pinoy for the other milk products. The theoretical knowledge learned by the student was applied during the plant practice. The observed problems were addressed in order to further improve the plant's operation.
