Abstract

The major plant practice was conducted at the Hacienda Macalauan Inc. (HMI) plant, Mabacan, Calauan, Laguna from October 17 to November 26, 2011. The cow’s milk supplied in the plant were from Yggachai and HMI farms wherein the former delivers an average of 440 liters and the latter brings an average of 1000 liters per day. The company is a medium scale processing plant and produces various products like fresh milk, cheeses, yoghurt, etc. They market their products to institutional clients like Krispy Kreme, The Manila Peninsula Hotel, The Manila Hotel, Hyatt Hotel and Casino, and numerous coffee shops. For quality control, HMI conducts different test such as organoleptic test, physico-chemical test and microbiological test of raw milk and finished products. The processing of dairy products was done from Mondays to Saturdays. The student applied theoretical knowledge acquired in the class. Recommendations were presented to solve the problems observed and to improve dairy plant’s operation.
