Abstract
Growth and bacteriocin production of P.acidilactici 3G3 was observed at five different temperatures (32ºC, 37ºC, 42ºC, 47ºC and 52ºC). Results show that the optimum temperature for both growth and bacteriocin production of P.acidilactici 3G3 was37ºC having an average microbial count of 1.66x10¹² per dilution after 12 hours and bacteriocin activity of 600 AU/mL with a maximum average diameter of 17.1875mm after 16 hours. The diameters of inhibition zones against Enterococcus faecalis 1072 were between 6.625mm to 17.1875mm. Moreover, there was good bacterial growth of 4.43x10¹¹ CFU/mL and bacteriocin production of 400AU/mL even in a 5L fermentor at 37ºC. The kinetic model from Leroy and DeVuyst (1999) was found to be able to describe the organism's growth since R²=0.9813 acquiring 3.178712 hr⁻¹±0.65 hr⁻¹ for Mmax, 22.3696 AU/g±17.045 AU/g for kb and 1.11725x10𔓒L/g-hr±1.05x10𔓒L/g-hr for Kinact.
