Abstract
This paper serves as a documentation of the field practice performed by the trainee at FARMTEC FOODS INC. located at 112 J.P. Rizal Street Brgy. Sabutan, Silang, Cavite from April 28 to May 31, 2011. The field practice aimed to relate agricultural engineering principles and theories to food processing. The main goal and focus of this paper is to present the processing operations of yam grits and the rendering process of chicken fat. Moreover, the field practice comprises the evaluation of the plant with regard to the standards of Good Manufacturing Practice (GMP) and providing necessary recommendations for the enhancement of the company's business operation. FARMTECH FOODS, INC.is considered as the major manufacturing plant which supplies dehydrated food ingredients in the Philippines. Such proposed food is available in powder, flakes, bits/grits, blend or oil (for rendered chicken fat). FARMTECH also offers services such as tolling for drying, pulverizing and blending requirements of other local food processor, and toll ,packaging in consumer packs. During the practical training, the trainee was tasked to record the activities assigned at each day and was able to observe, familiarize, evaluate and participate in the actual processing operations inside the plant. Although the company follows the necessary standards for food processing, the trainee observe some problems that arose during the field practice. Recommendations were stated i this paper.As a whole, the field practice did not only provide the student a good training ground in terms of actual operation experience and technical knowledge, but also made the trainee improved her skills with respect to management and human relations which she can apply when she works in the industry.
