Abstract

The effect of varying rice bran medium concentration on the growth of S. thermophilus Parameters in kinetics of its growth, lactic acid biosynthesis and sugar consumption such as μmax, Ks, α, β, Y p/s, Y x/s were obtained from different unstructured models. It was found out that S. thermophilus CH30A growth is enhanced as the rice bran medium concentration is increased. S. thermophilus CH30A grew well in range of 80-100% rice bran prepared from 10% (w/v) rice bran extract reaching as high as about 1.40x10^8 cfu/mL at 1005 rice bran medium. Growth kinetic parameters were then calculated from data obtained from growth in 50%, 75% and 100% rice bran medium where μmax = 0.2728/hr and Ks = 52.7554 mg/mL were values obtained. On the other hand, lactic acid biosynthesis and substrate consumption kinetic parameters were calculated from 100% rice bran medium where α = 1.45x10^8 mg lactic acid/cfu, β = 5.12x10^-10 mg lactic acid/cfu-hr, Yp/s = 0.2674 mg lactic acid/mL substrate and Yx/s 1.19x10^7 cfu/mg substrate were obtained.
