Abstract

The plant practice was conducted at the Food and Nutrition Research Institute (FNRI), Bicutan, Taguig City from June 18 to July 20, 2015 for total of 160 hours. The trainee was able to work primarily at NPDS, and assisted on the four sections of Nutrition and Food Research and Development (Food Fortification Unit, Recipe Development, Nutritional Food Unit and Functional Food Unit). The plant practice mainly focused on Sensory Evaluation, Physicochemical analysis, and pilot scale production using extrusion technology. The practicum imparted new concepts and skills regarding product development. It has enabled the author to acquire first-hand experience in plant operations through operating different machineries in the processing plant. It had been also advantageous and conducive to the trainee as modern facilities and equipment as well as innovative laboratory techniques were used and acquired. Lastly, through the internship, the author was able to develop competence by enhancing self-confidence and priming proper work attitudes by working with working for the chief food and nutrition research agency in the country.
