Abstract

The food science and technology practicum was conducted at Hacienda Macalauan Incorporated processing plant in Brgy. Mabacan, Calauan, Laguns. The practice was done from January to February 2014 for a period of 150 training hours. Hacienda Macalauan, Inc. is a known producer of milk and milk products, which are yoghurts, cheeses and creams. The trainee at the quality assurance laboratory, cheese room and cultured products room on a rotation basis to maximize the learning by being able to work in different areas. The trainee performed physicochemical and microbiological analyses of the raw milk and finished milk products at the quality assurance laboratory. The trainee also observed the production of cheeses and yoghurts in the cheese room and cultured product room, respectively. The trainee was able to familiarize herself with equipment used in the processing plant. The plant practice exposed the student to the work environment she may experience in the future as a food technologist.
