Abstract

The major plant practice was conducted at the Dairy Products and Technology Development Division (DPTDD), Animal and Dairy Sciences Cluster (ADSC), College of Agriculture, University of the Philippines Los Baños (UPLB) from June 17 to July 24, 2015 covering a period of 150 hours. From the university dairy farm, the DPTDD is responsible for the processing of milk into a variety of dairy products such as fresh milk, chocolate milk, yoghurt and white cheese. In the course of the plant practice, the student was able to apply the theories and principles learned in the university to actual food processing plant. The student gained hands-on experience and additional knowledge on the different operations in the dairy plant and was able to participate in the different dairy plant activities such as milk sampling, processing of milk products, quality control testing, storage and packaging as well as in plant cleaning and sanitation. Problems that were encountered during the plant practice were identified and recommendations were formulated so as to further improve the dairy plant.
