Abstract

The practicum was conducted at the Quality Assurance Department of Farmtec Foods, Inc. located at 112 J.P. Rizal St., Sabutan, Silang, Cavite. The company is a major producer of dehydrated food ingredients. Most of the products are from local and indigenous sources due to increasing demand from buyers. As a company that is Good Manufacturing Practices (GMP), Hazard Analysis Critical Control Point (HACCP), and ISO 22000:2005 certified by SGS Philippines, Inc., it has high standards in terms of quality and safety. The principles in Food Science, especially in the fields of Food Chemistry and Food Microbiology, were applied to various processes in the course of the plant practice in the quality assurance of the company?s products. The trainee performed techniques used by the company in moisture content analysis, physical analysis, microbial analysis, and sensory analysis. During the course of the training, she learned many various approaches to quality assurance not available in the university courses, proper time management, and better social skills. Over all, the trainee was able to meet the course objectives and the output required was fully accomplished.
