Abstract
Rootcrops refer to the group of crops which yield underground tubers or rhizomes. Several rootcrops such as sweet potato and arrowroot may be a good source of carbohydrates which could be measured by means of extraction and quantification. This study aimed to extract and partially characterize the oligosaccharides and starches from sweet potato and arrowroot. The total sugars in the sample was determined using Phenol-Sulfuric Acid Method. The study has shown that 6.27 g/100 grams and 8.77 g/100 grams of sugars were present in arrowroot and sweet potato, respectively. Sweet potato was found to contain relatively higher sugars concentration than arrowroot. The starch content of the samples were determined using Anthrone Method. The study has showed that 29.90 g/100 g and 19.99 g/100 g of starch were present in arrowroot and sweet potato, respectively. Arrowroot was found to contain higher starch content than sweet potato. The amylose and amylopectin content were also determined. Higher amylopectin was found in both samples in comparison with amylose. Based from the calculated Rf values in the characterization of sugars by paper chromatography, L-rhamnose and raffinose were the oligosaccharides found in sweet potato. Meanwhile, stachyose and trehalose were the oligosaccharides found in sweet potato.
