Abstract

Pineapple, Ananas comosus, is one of the most consumed tropical crops grown in the country. It can be consumed either as a fresh or processed commodity. Dole Philippines, Inc., is one of the largest producers of fresh and processed pineapples, lets its materials undergo postharvest operations that will enhance the physiological characteristics and extends the longevity of the life of pineapple . This report details the field practice of the trainee in the Mobile packing Plants of Dole Philippines, Inc. at Polomok, South Cotabato fro April 16 to May 18 2012. The report focuses on the operations after harvesting until dispatching of the fresh pineapple to the consumer. Theses operations include fruit receiving, bin quality inspection bin dumping, flotation, sanitation sorting and crown cutting, chlorine, fruit wax and aluminum sulfate applications, blow drying, box forming and coding, packing, in-process inspection, rapid cooling and cold strorage, palletizing strapping and van dispatching. The trainee gained firsthand experiences on the different processes done on fresh pineapples as well as technical knowledge on such processes.
