Abstract

The major plant practice was conducted at Sta Maria Dairy Farmers Multi-Purpose Cooperative Processing Plant, Paso Bagbaguin, Sta. Maria Bulacan from August 20 to September 19, 2010 for a period of 205 hours. The average volume of milk that the plant process daily was 250 to 350 L cow's milk and 50 to 100 of carabao's milk. The milk is processed into fresh and flavored milk, yoghurt, white cheese and paneer (unsalted white cheese) 'pastillas de leche' and milkbars. SMDF-MPCI's products are sold under the brand name "Sta. Maria Dairy". Since milk allocation is dependent on orders of customers, there was no regular processing schedule. The student performed platform test in the raw milk, Analyzed microbiological and chemical qualities of milk samples, participated in the actual processing and marketing program of the plant by joining the product delivery. The major practice enabled to apply the theoretical knowledge she learned in the university to the actual plant operations. The first-hand in dairy processing prepared and exposed the student to the nature of her future job as a dairy technologist.
