Abstract
Food Processing Plant is one of the main production plants of Goldilocks Bakeshop, Inc. It is located at 1120 McCollough St. Mandaluyong City. This facility produces Filipino dishes to various Goldilocks Stores in metro Manila and nearby provinces such as Rizal, Cavite and Bulacan. Due to worldwide economic crisis, the price of primary goods such as foods is increasing tremendously. GBSI-FPP also experienced this problem. In order to compensate the increasing cost of the raw materials, the company decided to reduce the operating costs. Since the company cannot control the price increase of the raw materials, manpower allocation was considered. Based from an interview with Production Process and Control (PPC) Manager, the Cutting and Cutting Annex Sections of GBSI-FPP acquired huge unproductive time which led to the occurrence of idle time. This was based on the demand and allotted productive time from January 2007 to April 2008. It was also found that among the other sections of FPP, these two Sections had the most number of workers. Root cause analysis was performed using Ishikawa Diagram. The causes were grouped according to man, machine, method and materials. The root causes were further analyzed and documented using CNX Analysis. C is for Controllable N is for Noise and X is for Experimental Factors. Controllable and Experimental factors were given recommended solutions. Noise was not considered because these were the factors that are difficult to control not in the scope of the study. One controllable factor was determined-workers do not put the tools in proper places. The recommendation for this factor was to have a storage area for sharpening tools. Five Experimental factors were distinguished. These factors were grouped as Group A and Group B. Each group is given recommendations. The proposed action for Group A was to have a proper scheduling and manpower allocation. The recommendation for Group B was to purchase additional tools and for other activities in Cutting Section to be moved in Cutting Annex Section. Using The previous demand and the time study results, two alternatives were drawn to address the root causes in Group A. Alternative 1minimized the number of manpower based on the major machines- treif dicer, bone saw, grinding machine and meat slicer. Alternative 2 reduced the number of workers based on major activities-dicing, sawing, grinding, slicing, cutting, chopping, tenderizing and couping. Using a factor rating, Alternative 2 was the best solution to address the causes in Group A.It was determined that after the implementation of the recommendations, GBSI-FPP can save PhP557,280.00 in a year.
