Abstract
The study was conducted to compare the growing performance and sensory characteristics of meat of Philippine native chicken (Paraokan strain) and their crosses with commercial broiler parental stocks. Three broiler genotypes were tested : the native (N) stock, Commercial Broiler (CB) hybrid, and the crosses (NC). Two trials per genotype using two different feeding regimes were done. The stocks were kept up to 12 weeks of age.
Highest initial body weights were observed in the CB hybrid and NC cross. Significantly highest body weight and gain were consistently observed on CB hybrids and NC cross was significantly more efficient than the rest of the stocks. No significant difference in mortality was observed among genotypes. The breast meat from NC cross has significantly higher score for juiciness and general acceptability at 6 and 12 weeks of age, respectively. Sex has significant effect on tenderness at 6 and 12 weeks of age. At 6 weeks, thigh muscle from N stock showed highest score for flavor and juiciness. Highest score for tenderness was noted on the NC cross. At 12 weeks of age, thigh muscle from CB hybrid has higher score for general acceptability and flavor. No significant difference was noted between sex groups. The differences in dressing percentage among genotypes were found to be significant at 6 weeks of age. However, at 12 weeks, highest dressing percentage was noted on the N stocks. Highest income over feed cost was noted in the CB hybrids at all growth stage.
