Abstract

The major plant practice was conducted at the Sta. Maria Dairy Farmers Multi-Purpose Cooperative Plant from October to November 2011. The cow carabao's milk supplied in the plant were from its cooperative members. SMDFMPCI is a medium scale processing plant and their products are fresh milk, falvored milk, yogurt, and cheese. These are marketed in Metro Manila and known for its brand as Sta. Maria Dairy. The student was able to familiarize as well as to experience different manufacturing and management practices in the dairy cooperative plant. these gave her idea on how to manage processing operations. She was able to perform different dairy plant operations, put into practice the knowledge and skills that she acquired from the university to the current situation in the dairy plant, and was able to develop her skills in quality control. Recommendations were given to resolve the problems encountered in the dairy processing plant and improve its operation.
