Abstract
Our almost seven years of research and development provided the scientific basis of the utilization of white corn as the Filipinos' most realistic and practical alternative staple now and beyond. The studies showed that white corn grits whether eaten alone or in combination with rice in varying proportions give better nutritional and health benefits. The eating cooking and eating qualities have also been established to be at par with rice. Because of the agronomic advantages of growing corn, its production is less expensive and thus assures the general public its accessibility at a cheaper cost thus can contribute towards the attainment of food secured Filipino households. Corn-based food products that were developed showed high potential for commercialization, thus, can contribute to poverty alleviation.
