Abstract

The practicum was conducted at the Dairy Products and Technology Development Division (DPTDD), Animal and Dairy Sciences Cluster, University of the Philippines Los Baños, College, Laguna from April to May of 2012, for a total of 150 hours. The said division is popularly known as Dairy Training and Research Institute (DTRI) and recognized for manufacturing quality dairy products such as fresh milk, chocolate milk, white cheese and yoghurt. During the practicum, various tests before the milk is further processed were done, different pieces of equipment were handled and milk processing plant routines were observed. DTRI is a noted institution in milk processing however problems were identified that devises some recommendation for its improvement.
