Abstract

The plant practice was conducted in Zenith Foods Corporation, a commissary for Jollibee Corporation. The six-hectare plant, located at Carmelray Industrial Park I, Canlubang, Calamba City, Laguna, serves over 800 Jollibee and Greenwich stores, providing them with safe and high-quality food such as the well known Chicken Joy, Jolly spaghetti, and Yum Burger. The duration of the internship was from May 29 to August 10, 2012, for a period of 206 hours. The student-trainee was initially given Good Manufacturing Practices and Basic Safety orientations to equip her with essential knowledge as she embarks on the works of a food technologist. She worked under the Quality Assurance Department where she performed inspection duties and routine procedures such as proper sampling, physicochemical analyses, microbial analyses, and sensory evaluation, from raw material up to the final product. She was also exposed to the actual manufacturing processes in the commissary. In all, the plant practice allowed the student to apply the theoretical knowledge she acquired from the university. It widened her practical technical skills and experience. The practicum also broadened her outlook on the significance of food science and the delight of being a food technologist.
