Abstract

The Food Science and Technology practicum was conducted at Sensient Technologies (Phil.) Inc. located at Lot 5, Block 12, Star Avenue Laguna International Industrial Park, Brgy. Mamplasan, Biñan, Laguna from May 15, 2012 to May 31, 2012 for a total of 150 hours. Sensient Technologies Corporation is a leading global manufacturer and marketer of flavor, color and fragrances, employing advanced technologies to develop specialty food and beverage systems, cosmetic and pharmaceutical system, inkjet and specialty inks and colors, and other specialty chemicals. The student was exposed to different operations of the company including the preparation of powder mixes and seasonings, flavor evaluation and recording, flavor compounding and flavor applications. In the Quality Assurance laboratory, the student was tasked to conduct several physico-chemical and microbiological analysis of the products coming out of the production. The student was provided a hands-on experience on the actual manufacturing of food products within a real working environment. After the practicum, the student gained a more profound understanding of what he will face in the food industry. Some problems that were encountered during the training were mentioned and the recommendations were suggested.
