Abstract

The plant practice was conducted at 5th District of Pangasinan Dairy Multi-Purpose Cooperative, which supplies dairy products all over the Province of Pangasinan, Baguio City and Metro Manila. The practicum lasted from 16th of April 2012 to 11th of May 2012 for a total of 160 hours. Microbiological analysis was done on the raw materials. The practicum endowed the trainee with a full understanding of the different operations of a processing plant. The trainee learned new skills and enhanced self-confidence while performing assigned tasks and dealing with people. Furthermore, the trainee gained a whole new appreciation of the work of a food technologist in the food industry. The plant procedures and protocols were observed and several recommendations were made.
