Abstract

The practicum was conducted at the Dairy Products and Technology Development Division, under the Animal and Dairy Sciences Cluster which supports the development and continuous improvement of the local dairy industry through research, instruction and extension. The practicum was conducted from 03 December 2012 to 21 February 2013 to meet the required 150 hours of training. The trainee was assigned to the Quality Control Department, as well as, in Production Department. The trainee learned several quality control tests for milk and milk products, such as: Clot-On-Boiling (COB), Acidity Test and Lactometer Test. The principles obtained in the University were applied and was extended further. In addition, the trainee was able to experience hands-on activities, from sanitizing of the work area and bottles to processing of the milk products to packaging of the finished products. The training gave the trainee a strong foundation on food processing, food sanitation and food quality. In line with this, knowledge and familiarity of the practical labor and manufacture will help the trainee in trouble-shooting problems that might occur on her future career. At the end of the plant practice, the trainee was able to acquire a deeper understanding of the theories and concepts related to food, especially in milk, and a worthwhile experience of the processes applied to food products.
