Abstract

The practicum was conducted at CDO-Foodsphere Inc. at Brgy. Bulihan, Malvar, Batangas from May 2 to May 25, 2012 for a period of 150 hours. The CDO Foodsphere, Inc. manufactures a variety of food products such as groceries and frozen food items which are well-known in the Philippines and even out of the country for both refrigerated and canned product lines. The trainee was assigned to different sections of the Quality Assurance department namely: FPM Section, Central Laboratory Section and Sensory Evaluation Section. Her works consist of inspection of raw materials and finished products. Inspection revolves on the physico-chemical properties of the product such as weight of products, monitoring of product and area temperature, product balance, flavor and texture test, and color consistency. She was also given the task to prepare and sort reports for the evaluations conducted. The trainee was able to gain hands-on experience on the different analysis done in the food industry and was able to test and apply the theories and principles she has learned in the four corners of the classroom. She was exposed to different technological equipment in the industry as well as to the different problems inside a real functional company. She saw the different troubleshooting manners for the problems observed and xiii was tested with these problems when encountered alone. The entire training taught the importance of not just knowing the technicalities of the work but also the understanding the personality of the people she worked with to be able to establish good working relationship. The experiences in the practicum equipped the trainee the knowledge, skill and determination that would definitely help her to become one of the most outstanding, effective, and efficient food technologist in the near future.
