The soluble endosperm proteins from 11-12 mo old makapuno were resolved into 18, 29 and 32 bonds, respectively. The same methods yielded, respectively 17, 17, and 35 bonds in the normal c000nut of the same age. PAGE detected six protein species unique to makapuno and five protein species unique to the normal nut. The former group have Rf values of 0.035, 0.050, 0.1 0 0, 0.200, 0.600, and 0.910, while the latter have Rf values of 0.310, 0.380, 0.680, 0.820, and 0.950. SDS-PAGE resolved four polypeptide species unique to normal nuts having Rf values of 0.53 (,44=28.5K), 0.54 ( (44=28.0K), 0.575 044=26.5K), and 0.88 (MW=1 5.0K). The polypeptides observed to be unique to makapuno had Rf values of 0.03, 0.10, 0.16, 0.25, 0.30, 0.35, 0.45, 0.46, 0.48, 0.49, 0.66, 0.70, 0.76, 0.78, 0.85, and 0.94, with molecular weights of approximately 71.5, 6 3.0, 56.0, 51.0, 4 3.5, 39.5, 33.0, 32.5, 31.5, 31.0, 22.8, 21.2, 18.7, 18.0, 16.0, and 13.5 kilodaltons, respectively. IEF detected two protein species unique to makapuno which have Rf values of 0.19 and 0.48, with pKIs of 7.72 and 7.32, respectively. Five protein species were unique to normal nuts. These have Rf values of 0.30, 0.33, 0.76, 0.78, and 0.80, with Oa value of 7.6, 7.5, 6.9, 6.9, and 6.9, respectively. Both makapuno and normal nuts exhibited a preponderance of slightly basic proteins.
