Abstract

The practicum was conducted at Alaska Milk Corporation for a period of 150 hours. Alaska Milk Corporation has been one of the major players in milk industry in the Philippines. AMC has various milk products such as liquid canned processed milk and milk powder aside from milk product, the company also offers non-dairy product such as creamer. It continuously develops more variants of milk products through the years. The practicum aimed to let the students apply the knowledge learned from the university to an actual food processing plant. The trainee gained knowledge in processing of milk powder. She gained skills in conducting important analyses such as determination of bulk density, wettability, moisture determination, scorched, total solids, and fat content that should be done before packaging. Actual processing procedure was also discussed during the plant practice. The plant practice experienced let the trainee experienced the actual processing of milk powder as well as making decisions whether the newly processed milk is good or bad. As a whole, the practicum helped the trainee developed her skills as food technologist and good working attitudes toward her co-workers.
