Abstract

The plant practice was conducted at XYZCO Foods Corporation, Sto. Nifio, Marikina City, from April 9 to May 4, 2012. XYZCO Foods Corporation is a commissary which supplies fresh, semi-processed and processed fruits and vegetables to various fast food companies and restaurants in cooperation with the Department of Agriculture. The trainee spent 180 hours as a member of the Quality Assurance Team. She was assigned in various parts of the production such as the receiving of raw materials. processing of fruits and vegetables, packaging of the finished products, inspection upon dispatching of finished goods and storage of products for deliveries. She was asked to monitor the chiller and processing room temperature and on-line processing and to fill up forms needed for documentation such as GMP checklist, daily sanitation checklist, daily pest activity checklist and the dispatching form. She learned during the training not only how to fill up QA forms but also the importance of implementing certain principles such as "first in, first out" or FIFO rule. She also learned the standards and criteria needed to be monitored and done in each processing stage. She was also exposed to quality auditing and took part in the preparation for the said audit. She also learned important lessons in life as she spent every single day for three weeks with different kinds of people each with different life story to tell.
