Abstract

The practicum was conducted at Alaska Milk Corporation located at Magsaysay Road, Barangay San Antonio, San Pedro, Laguna from April 14 to May 5, 2012 for a period of 150 hours. The company is well-known for its various milk products. These products include powdered milk drink, coffee creamer, evaporated and condensed milk, ready-to-drink sterilized milk, and flavored milk and yogurt. The trainee was exposed to the technical aspects of a dairy company. She was assigned to work in the Milk Powder Plant-Quality Assurance (MPP-QA) Laboratory giving her the opportunity to improve her laboratory skills by performing sampling, and various physico-chunical analyses for milk powder and coffee creamer. In the MPP-QA laboratory, she was able to monitor the quality of the products. The trainee also gained knowledge and experience on the production of milk powder, sanitation and safety practices employed in a milk plant. The trainee had the chance to work with different people of the same field of expertise and learned that task and role distribution is very important. The practicum made her appreciate more the important role and responsibility of a food technologist in the field of Quality Assurance.
