Abstract
Three honey samples, produced by "wild" honeybee (Apis cerana) in Lipa City, were collected. The pollen and chemical composition of each sample were analyzed based on the analysis outlined by the Codex Alimantarius Commission. The pollen sources were identified based on the pollen types found They are Mimosa pudica, Cocos nucifera. Leucaena leucocephala. Solanaceae and Compositae. the predominal pollen source is Mimosa pudica, secondary source is Cocos nucifera. Leucaena leucocephala and Solanaceae are both and important minor source on the May and June/July samples respectively. and compositae is considered as minor source. May 24, June 21, and July 19 samples contain high number of pollen grains thus classified under class II. Reducing sugar for all sample averaged to 63.3 which is a little bit higher than the standard value of 60%. Sucrose sugar content for all samples averaged to 4.7 which is below the standard value of 5%. Diastase activity was present in allsamples and the values are higher than the standard value of 3%. Hydroxymethyfurfural content of all the samples averaged 47.3 mg/kg sample which satisfies the standard value of 40 mg/kg sample Moisture content of the sample registered higher values which an averaged of 24.8%. The standard value for moisture content determination is 21%. Based in the series of analyses, the samples collected from Lipa City area considered pure "wild" honey
