Abstract

The Food Science and Technology Practicum were conducted in Guaranfood Manufacturing Corporation in Everlasting St., Patria Village, Del Remedio, San Pablo City from April 16 to May 18, 2012. Guaranfood Manufacturing Corporation is a company that stands for quality and safe foods. During the practicum, the student trainee was able to apply knowledge in Food processing, Food Sanitation and Food Microbiology. The concepts of HACCP (Hazard Analysis Critical Control Point) and GMP (Good Manufacturing Practices) were implemented inside the company. The student trainee was exposed to the processing of the products of the company like condiments, dressings and pickles. Physico-chemical analysis and preparation of microbiological mediums and reagents were performed. Operations in packaging section, processing area and sanitation area were observed. The student trainee had the opportunity to give some recommendations that can help improve the operations. She recommends having more seminars not only to avoid accidents but also to update the knowledge of the workers as well as the staffs on HACCP, GMP and 5’s. The student also suggests that ventilation be provided and monitoring of delivery dates to avoid rescheduling of analysis. Apart from recommendations, the student trainee also gained insights on the concept of auditing, application of quality and work ethics in the food industry. After the training, the student appreciated the concepts taught in the university and gained new knowledge and skills that she can use in her future career.
