Abstract

The theories and principles learned by the author from the university were applied during the plant practice conducted at Alaska Milk Corporation located at Magsaysay Road, Barangay San Antonio, San Pedro, Laguna. The plant practice started from April 11, 2011 to May 5, 2011 where a total of 150 hours was completed. The author was assigned in two departments. The first area was in the Milk Powder Plant Quality Assurance Laboratory, where sampling from two different dryers and different physico- chemical analyses of powdered samples were performed. The author also gained knowledge on the production process of milk powder. The second assignment was in the Liquid Milk Plant Quality Assurance Department where observation of the production process of evaporated filled milk and sweetened condensed milk was done. Also, the author was also able to perform different physico-chemical analyses for the two milk products. The author gained experience and was exposed to the routinary work of a typical food technologist through this plant practice. This gave her the opportunity to meet and work with different people of the same field of expertise. The plant practice brought renewed interest and better understanding of the dairy industry to the author.
