Abstract

The plant practice was conducted from October 27 to December 20, 2011 for 150 hours under the Quality Assurance Department (QAD) at Cabuyao Meat Processing Corporation (CMPC) at Pulo, Cabuyao, Laguna. CMPC (formerly known as Swift Foods Incorporated – Meat Division) supplies both local and international markets with the best and widest range of meat products through rigid quality standards as employed in all aspects of operation. CMPC is now one of the AAA Meat Processing Plants in the Philippines and was able to acquire HACCP Certification for its products before. The trainee was assigned into two sections of the Quality Assurance Department: Sensory Laboratory/Test Kitchen, and Chemistry Laboratory where he conducted sensory tests and physio-chemical of the company’s products. The plant practice was done to apply the principles, theories and techniques of food science learned inside the university to the actual work condition. Exposure to actual food processing operations and management operations particularly in food production and manufacturing allowed the trainee to gain modern techniques and skills required in being a food technology. Problems were encountered during the plant practice and some recommendations were suggested for the improvement of the said problems. The plant practice provided the trainee with the needed working experiences and deeper appreciation for the nature of work of a Food Technologist.
