Abstract

The plant practice was conducted in Zenith Foods Corporation, a commissary for Jollibee Corporation located at Carmelray Industrial Park I, Canlubang Calamba City, Laguna from April 19 to May 27, 2010. The student-trainee completed 240 hours training under the Quality Assurance Department where she performed different inspection duties and routine operations such as proper sampling, physicochemical analyses; microbiological analyses, and sensory evaluation from the raw materials up to the final goods. The trainee was also exposed to the actual production process and was familiarized with several pieces of equipment in manufacturing lines. A seminar on Good Manufacturing Procedures and Safety Program of the company was also conducted to further equip the student-trainee with essential knowledge to become an effective food technologist in the future. In all, the practicum allowed the trainee to apply theoretical knowledge and skills learned from the University to actual processes in a food company and broaden her practical experience, knowledge on the operations in food processing as well as her outlook as a student of BS Food Technology.
