Abstract

The training was conducted at the Dairy Products and Technology Development Division, Animal and Dairy Sciences Cluster, College of Agriculture, University of the Philippines Los Baños, College, Laguna. The training was for 6 weeks, from April 16 to May 26, 2012, for a total of 240 hours. The student learned different laboratory techniques in milk analysis such as clot-on-boiling test, acidity test and lactometer test. The trainee also acquired knowledge on dairy products manufacturing such as fresh milk, chocolate milk, white cheese and yoghurt making. The student also learned how various types of equipment such as pasteurizer, homogenizer, filler, mixer, and freezer are used in dairy processing.
