Abstract

The practicum was conducted from March 30 to May 4, 2012 at Alaska Milk Corporation, Magsaysay Road, San Antonio, San Pedro, Laguna for a total of 152 hours. Alaska Milk Corporation manufactures liquid canned milk, powdered milk and UHT milk products. During the course of training, the author was assigned in the Central Laboratory where the physico-chemical and sensory evaluation laboratories can be found. She was able to conduct physical and chemical analyses of the samples given by the other departments of the plant upon request. The student also conducted particular analyses for raw material acceptance, routinary tests and stability tests of the finished products. She prepared and standardized certain reagents needed by the laboratory as well as other departments. The author had the opportunity to apply all the theories and principles that she had learned in the university into actual food processing plant operation. The student learned several hands-on techniques and practices in the quality assurance department in a food industry. The experience helped the student gained social development and proper work attitudes needed in order to be successful in her chosen field.
